Faux Chipotle

This stirred up one of the other lists...

Anybody else notice that in recent years chipotle has become a more and more popular item? It's showing up in chain restaurants, salsas and snacks. Problem is, they seem to share one characteristic, a complete lack of heat! Anyone who has tasted even a small bit of true chipotle knows that aside from the smoky aspect, that they are pretty darn hot. Even after almost 20 years as a chilehead, a bit of one of those babies is something to make me sit up and take notice.

It seems that invariably the alleged "Chipotle" spiced products have no noticeable heat, and might have well been made using liquid smoke.

In a double affront to Chilehead sensibilities, the Chain restaurant "Chiles," which uses a chile pepper as a logo (Always wanted them prosecuted for misleading advertising, none of their food is hot...) offers chipotle chicken and a chipotle burger. You guessed it, none of it is spicy.

I guess it's just a follow up to the Texas A&M development of the heatless TAM jalepeno that they introduced a dozen or so years ago (Which, by the way, cross pollinates very easily. Anyone note that finding actual hot jalepenos in the supermarket in recent years is a hit or miss affair?), or the current corporate search for a heatless habanero!

I wonder if there is a market for the alcohol free vodka that comes out of my fawcet?
 
I agree, they never have enough heat but usually they lack flavor too. I had some chipotle smokies(sausages) yesteday and I was really dissapointed, and I've bought lots of sauces that weren't all that great too. I make my own chipotle sauce now with smoked chocolate habs and it has some major heat and flavor.
 
Chipotle in Mexico comes in everything and it is picante.

They are usually the small meco xalapa chiles.

They send the large bland xapalas here because gringo chile eaters are a tiny minority of their market.
 
I agree chipotle hot sauces are not hot at all (this includes "el yucateco, chipotle), but the sauces flavor is decent enough to be used as steak sauce mixed with worcestershire sauce :)
this is pretty much the only way I like jalapenos, in chipotle form.
 
I have had Herdez canned chipotles en adobo and they have always been plenty hot. I use them to make a nice bbq sauce. Not for your fair haired gabacho amigos by any stretch. They light most people up like a pinball machine on 220v.

nothing is worse than a good meal ruined with bad generic hot sauce !!!!
I had a plate of fetticini with jumbo shrimp that was just perfect untill the looser in the kitchen dumped a half cup of generic franks on it to make it the "spicy" version.

I also agree that most people find the word pepper to hot to order.
 
I'll second the canned chipotles. They're too hot for my girlfriend, but i love them. Nice and smoky hot with good flavor.

I've seen alot of peppers going sweet instead of heat. It's a shame really. Anyone see jalapeno sized sweet peppers flooding the market lately?

Only thing i hate about them is they have way too much salt and sugar in 'em.

Canned chipotles are good for us who dont have a ready supply of various peppers. Just watch out for San Marcos brand chipotles in adobo, not hot and watered down, I think it was just a can of diced tomatoes.
 
I always pick up herdez canned chipotles thats what I can get around here and man cheap...But I have found heat varies from can to can..one can can be a little warm and the next can has a decent kick to it but either way tasty.I have a can of their jalapinos I should open and try them im just hooked on my own pickled japs
 
Come on folks!!! Hasn't anyone sampled CaJohn's new Killer Chipotle? This stuff rocks and will put a new spin on chipotle in terms of heat. You won't look at the chipotle the same way afterwards.

GOD DAMN IT!!!!

The original poster is right. Even smoked jalapenos carry a decent bit of heat.

I cook with habs or hab powder once a week. I testify that fresh jalapenos are HOT. The assumption that japs are not hot, must come from pickled japs.

Even though vinegar is not a great solvent of capsaicin, it has to be admitted that the vinegar from a jar of japs has a decent amount of heat. This has been sucked from the meat of the japs.

Also, the "U of Texas" or whatever jap, that is bred to be mild for poppers, is giving it a bad name!!!!

Serioiusly. If I see another thread from someone who has found a fresh jap, titled "Jalapeno tastes way too HOT!!!" that goes on to speculate whether or not it has been crossed with a hab, I MAY PUKE!

I love you as a fellow pepper lover rainbow, sorry this rant fell on you.
 
The best is to make your own if you can, or if like me you don't have the ability to do that..buy the real Mexican stuff.

It's the tipico variety, also called chile meco or chile ahumado.
It Does have some heat in it and is truly a wonderful rich smokey flavor.
It's almost better than salt & pepper..:)

I got these from a local store: DeLeon's Mexican Grocery, Deli, Bakery, & Tortilla Factory

Nice place..they have tons of sauces, and an entire aisle of dry spices, peppers and more.
