Mariachi Pepper?

Like my jalapeños, Serrano's and the few others I like unripe, it depends on my fresh pod sitch, if I have plenty of fresh pods the mariachi, japs, serranos, etc get left to ripen if not, well........
I usually will pick evenly from the unripe pods so that all get a chance to ripen at least a few! My advice for mariachi, if they are unripe wicked good fryin' peppers, but also good sliced on pizza or nachos, ripe make good salsa, they are great fresh,I've never made powder or sauce from them, but quite a useful utility pepper, reminiscent of Fresno, but more crisp when ripe, at least that's my experience
