Hey! New to the site from NJ/NYC by way of Chicago

Hey, All -
 
I'm new to the site, but a life long Pepper and Chili grower and lover from the midwest.  My family had a large farms in the suburbs of Chicago and rural Missouri.
 
Currently live in NJ and NYC.
 
Just pickled my first peppers of the season...and my first in many many years.  I followed the advice from beerbreath81 on this site, but using my own brine recipe.  Thanks, beerbreath81!
 
Anyone have a Pepper Sauce recipe using Caribbean Reds?  HIT ME UP!  I made an awesome batch a few years ago with my brother's mother-in-law from Trinidad.  She (Ms Olive) was known for her cooking, but most specifically for her Pepper Sauce made from Caribbean Reds.  Probably the BEST Pepper Sauce I've ever tasted.  As you can imagine, everything she did was from memory and 'eye-balling'.
