looking for a good pepper relish for brats

Here is one we enjoy. I don't make it all that hot because my wife doesn't like it too hot. 
 
4 cucumbers- deseeded
1-1/2 lbs of jalapenos
4 onions
 
Chop everything up in the food processor,
Salt and pepper to taste while adding enough vinegar to get the pH below 4, then water bath can it.

Add as many habs or super hots as you can stand.
