My first attempt at making sauce

The first season im growing peppers ever and here the sauce ive come with.

the orange one receipe is:
 
10 jalapeno
10 red pepper ( for me it is 4 starfish , 2 red fresno pepper, 4 cayenne ) 
2 tbs brown sugar
3 thyme branch
1/2 lime juice
1/2 cup vinegar
2 cup water
4 garlics clove
1 medium onion
salt and pepper to taste
2 tbs of canola  oil
 
the green one is alot simpler

I wanted to test the addition of sweet ingredient and I really love the taste. The orange one is more hot than the green one and taste better.
 
I think I did great for my first time (minus the huge mess in the kitchen)
 
agreed w HS about the oil.  add the liquids and simmer the peppers in that rather than saute.
 
the sauce looks good. love the bottles you used - looks like Grolsch
 
Yeah, I'd forget the oil and the water. If you need liquid, consider a fruit juice; maybe apple for the red one, kiwi for the green. Just a thought.
 
Great looking sauces by the way. Love the colors and the bottles.
 
Did you check your pH, for safety?
