Easy Spicy Rustic Bread Loaf

Hey everybody,
 
Here's a quick and easy recipe for a rustic white bread loaf that looks and tastes like it took a whole lot more effort to make than it really did!
 
Ingredients:
 
16 oz Flour (All-purpose is fine)
1 and 1/2 Cups Warm Water
3/4 Tbsp Salt
3/4 Tbsp Instant Yeast
x Amount Hot Sauce
 
 
1) Let yeast proof for about 5 minutes by placing and stirring them into a bowl of 1 cup lukewarm water.
 
2) Into a half cup measuring cup, place the amount of hot sauce of your choosing (I used 1 Tbsp of El Yucateco XXXtra Hot sauce, which in this recipe made a nice warm type of spicy - but not super spicy loaf, next time I would prefer 1.5Tbsp). Whichever amount you do choose, just add water until the sauce+water comes to 1/2 cups worth.
 
3) Place flour into large mixing bowl. After yeast has proofed, mix the hot sauce/water from step 2 into the yeast water, stir, and then pour all of the liquid into the flour. Mix until all flour is hydrated. No need to knead this bread after fully combined.
 
4) Cover with plastic wrap or tea towel and let rest in a warm area until doubled in volume, 1-2 hours depending on air temp.
 
5)After doubling, use a spatula to squish/scrape it back into a ball shape within the bowl. Lightly flour a baking pan and dump the dough onto the pan. Shape it into a log shape. It will be a wet sticky loaf and may try to expand to fit the pan, this is fine. Let sit for around 15-30 minutes ( I usually preheat the oven now, to 450F, instead of before I start, once it's preheated then I put the bread in.)
(Electric oven users should put a pan of hot water on a lower rack to provide steam for the loaf in the oven - gas users don't need to)
 
6) Bake for 25-35 minutes, golden brown on top usually indicates it's finished. Typically 30minutes for me.
 
EATTTT...or let it cool a bit.

Looks great, going to try it this week end. Maybe with a home made garlic butter while still warm.. Thanks for the recipe.
 
Just made this! It's delicious even though your loaf looks much nicer than mine turned out lol. I will have to experiment a little more as I used active dry yeast and had to tweak it a little bit. I used a half table spoon of Red Ghost and half tablespoon of Iguana En Fuego which added a nice flavor to the bread. Next time I will simply use En Fuego and maybe rub some olive oil on the outside of the loaf in the last 10 minutes.
