Hot Oils! It's not just for the bath house...

Yes Folks, that's right, I said it.

I am not sure how many other people use or make Hot Oils to cook with, but let me tell, you, they are terrific.

For those of you not familiar with Hot Oils, they are very simple to make. Take any sort of oil/fat (bacon fat, ghee, olive oil) that you like and heat it gently in a saucepan with crushed dried peppers (habs, 7-pot, tepin) for as long as needed, strain and use.

Once you use this spicy substitution, you will wonder why you have never used it before.

So who else out there does this?

I use them all the time. Always have. Like you said, they are very easy to make.

There's nothing better than a few eggs over light cooked in a good dose of chili infused olive oil. Add salt, black pepper, and some good bread and you pretty much have a meal to kill for (just add coffee).

I'm there! I collect nice looking bottles and add the chili oil but add the dry peppers too, looks nicer!

I do like Biscombe does...olive oil with dried chilis inside...I am out at the current time but it won't be long before the stash is recreated...

I like sage-almond oils for hot times...oh wait..wrong topic.
