     I saw that second pic and I was gonna "critique" your kimchi recipe. Then I remembered you saying something about using a cabbage leaf to hold mash down. That makes way more sense. I love that idea, btw.

Thanks dash 2 picked that up from JamesN. Working great no yeast or mold problems used whit zin for brine and whitelab for starter
