I experimented with making a hot yellow mustard today, based on the All Recipes recipe from http://allrecipes.com/recipe/hot-pepper-mustard/detail.aspx
I changed the number of servings from 144 to 36. The smaller batch size allows me to experiment more easily with taste, plus I don't have a setup for water-bathing. I do have mason jars with the food saver attachment to such out air, which should suffice for keeping a jar or two in the fridge for a while. Also I didn't use any banana peppers, but instead used one yellow brain from my garden.
Here are the ingredients I used:
1 yellow brain
1 cup yellow mustard (Just used some generic store brand)
1 1/4 cups white sugar
1/4 cup honey
1 cup apple cider vinegar
3/4 teaspoon salt
1/4 cup + 2 tablespoons all-purpose flour
1/4 cup water
I followed the directions on the All Recipes site. I de-seeded the pepper and chopped up in a processor.
I combined all the ingredients except the water and flour in a pot and boiled. I had mixed the flour and water beforehand and added to the boiling mix. Then boiled for five minutes while stirring. The flour clumped up in the mix. I let it cool enough to add back to the food processor and blended smooth. I ended up with a little more than what would fit in a one-pint mason jar, so I divided up into two. When I was cleaning up the food processor I tried a tiny taste off my glove and it was good and hot. I'll give it a go this evening after the mix is cold. Probably try with some grilled italian turkey sausage. I'll post the results on how it turned out after. If it's good I'll take a jar to work and share with my co-workers.
