stabilizing a strain of peppers

Keep growing the same line with the seeds of the most perfect pods
Then look into cloning from those plants that produce consistently
Trying to breed out a junk gene trait is time consuming,it has been done with other plants so . . . .
 
Hogleg is right. You pretty much need to grow that same exact strain, or else multiple crosses could happen and you would end up with another unstable pepper.
 
Where do I start.  Breeding to F8 can and can not make a strain stable,  Lets say the plants are Isolated in a field but not every plant is Isolated but open pollinated then unwanted genes can be passes every year and even at F8 they can still be unstable.  I think to many people think Isolated fields breeding to F8 is the way to go. but I don't, If you want make a stable strain grow as many as you can and pick only the best and tape glue or bag the flowers so all seeds you save are 99% self pollinated I would say 100% but things happen.  
 
It also depends on the genes your working with and what your trying to breed for. If you pick the wrong genes to breed for it could still unwanted genes pass F20 or be stable as soon as F3 for the gene/s your breeding for.   I for one don't think Isolated open pollinated should be used till they are stable.   
 
It also depends on the first cross you use are they alike or really Different in there genes.  
 
Breeding for Color is one of the easiest things to breed for it's the unseen genes that are the hardest to breed for. 
 
Also there's back breeding that can be used but that again depends on what your breeding for keep seeds only from the best plant.   
 
#1 Know what your breeding for, and stay on track.
 
#2 grow as many as you can, cull all that are not what your breeding for
 
#3 Don't let others change what your breeding for. 
 
#4 Don't keep many different pheno's pick one or two and self pollinate and don't cross them unless it's only for color.  
 
Yeh Mr. Him is on the money, bagging and or gluing is the way to go if you do use glue you water a natural water resistant type not rubber glue or plastic glue as they will kill the flower a good wood glue would probably be the one you want as most are water resistant. And growing as many plants as you can is a good idea also as you want to pick the strongest plants that have the color and shape of the pod you are looking for, Taste wise is a gamble as you might have to cross in a pepper to improve the flavor then you will have to start the process all over.
 
Awesome points made by Mr.Hill. Now if money were no object and time was on your side. You could grow the Iso field of plants to fruition choose the best two plants with the most desirable fruit pheno. Clone those two plants, then grow the clones indoors and backcross them to each other and so on and so on. Using your outdoor field to choose phenos and your indoor to backcross and stabilize. just my two bits.
 
If money wasn't a object Large temp controlled Greenhouses, and if it was for the hottest Record every plant lab tested.  :)   
 
I was going out of my way to give you first hand experience in this subject by allowing you to grow out 5 strains that I have created but you were so worried about the $2 postage cost that it caused you to act remarkably insulting and demanding because I couldn't get the seeds dried out fast enough to suit your liking. I'm in total disbelief over what exactly you could be thinking to justify the way you acted towards somebody trying to give you free seeds that I've personally invested so much time and effort into creating and that cannot be obtained anywhere else. at least I know not to try and do you any more favors I'm not capable of meeting your ridiculous expectations. for future reference try not to be so demanding and insulting while you have your hand out... that won't get you very far around here

Well said. This dude is one of only two bad interactions I've experienced here (out of a couple hundred total). It's damn good folks up in hurra! Chili heads in general are almost always damn good dudes

As one of the people Wes has been kind enough to share with, let me tell you, he's come up with some truly cool crosses. Agreed with the sentiment about people who get paying it forward. If you haven't seen it yet, check out my newbie seed train. Good example of new folks who really appreciate it when you share with them.

I wanted to let you know I really appreciate what you, Mike and other chiliheads do. It was really a misunderstanding. On the 27th of October Wes sent me this message "I'm really sorry but I'm having to drive some more Bad Brains seeds out. I want more slip away from me than I meant to..." I didn't know if he didn't have any more seed or what was up. So I sent him a message asking what he meant, the next day I asked if he had the seeds or not and if he could get back to me. Wes did not get back to me until today, and I understand people are busy. Before Wes got back with me I sent two more poorly worded messages, but I never knew that he had the seeds, I just thought he was blowing me off. In my opinion my messages were not that rude, the rudest thing I said was would you like to get ripped off and if not why are you ripping me off. I know it might seem like I was insulting him, but again I did not know he had the seeds. The money wasn't a big deal, but it adds up. I'm not blaming anyone but it was just a misunderstanding. Again thank you guys I really appreciate you paying it forward and I am sincerely sorry.

The problem isn't that you misunderstood my typo-laden message (I know better than to not proof read after using voice to text but obviously I did not this time...).
The problem is all about how you chose to react like a jerk because I did not respond to you as fast as you thought I should have and that's cool man, you're entitled to feel that way but I responded to you the moment i first read your series of messages demanding the return of your money ($2 shipping money??? Really dude???) And accusing me of ripping people off.
Its ridiculous. Despite not having a clue who you are I was more than happy to go out of my way to gift you with seeds that you asked to purchase, in addition to several other varieties that I've infested time and hope and effort into creating but because I didn't respond immediately to your message you start making accusations and demands. I was trying to be kind and help you out just cuz I was capable of doing so, and in return you were a total prick. Good luck with that mentality man, it won't take you too far...

Here are the messages I sent you, "Ok so can you send the seeds or not? If you can't you can send different varieties or just refund the money.","Could you please get back with me. Would you like it if someone wouldn't send you seeds you payed for. All I'm asking if you don't have those seeds send different ones or refund the money.","Hi,
I wondered if you planned on returning my money or sending the seeds. Please contact me soon." Nowhere in any of these messages was I demanding my money. I just wanted it back if you didn't have the seeds. The last of those three was not as nice but I was pretty sure you didn't have the seeds. That's funny you call me a prick when you were the one that wrote for people not to work with me on my two last posts. Then insulting my mental health?
 
there are few things that I feel the need to point out in response to the skewed spin you're putting on your version of our "misunderstanding"but instead my only response is this:

if there's anything else that needs to be addressed then lay it on me via personal message. otherwise I bid you farewell sir. I'm sorry it did not work out between us but it's not you it's me. I just don't dig your style man. I will leave it at that and move along.

Remember always that if the shoe were on the other foot you would walk away awkwardly.
