Red Currant, Apple and Smoked Trini Mystery Hot Pepper Jam

So apparently apples have enough pectin in to blend some peppers into an already made jam so you don't have to use pectin. I find that using pectin sometimes makes a very firm jelly. So here's what I did.

Peel and shred 2 apples, mix in the peppers you decide to use. I used 2x wickedmike's hot trini mystery peppers which I had smoked in hickory the night before. Put that in the food processor and pulse till it's all broken down. Next incorporate 1/2 cup sugar with 1/3 cup apple cider into the mixture into a pan and bring to a boil. Once boiling, reduce and simmer until there isn't any liquid. Finally, add in 36oz of any jelly flavor you wish, I used red currant this time. Mix and bring to a boil, the reduce to a mdm low and let it go for about 20 minutes, till it reduces to about 4 cups. Mix in 1/2tsp apple cider and then jar it.
