fermenting 1 month ferment

I just finished my first official fermented hot sauce and it came out killer!! I only did a 1 month ferment with this one since i have 3 other gallon jars fermenting away. Does more time really make that much of a difference? the flavors after 1 month are already so complex and delish. I'm gonna pull the next one at 45 days and the one after at 60 just to see the difference. I must say though a month did wonders.
 
FD you're doing it right with the multiple aging - you'll be able to see how things change.  Agree with hot stuff that stuff mingles/mellows/matures over time.
