New registration and intro

Just joined but have been looking for a pepper related forum and considering joining one for a while.  I am a 100% disabled Vet who became ill while in Iraq which caused my ultimate retirement.  I moderate  over on the Hobby Machinist site and do ornamental iron work in my home shop to keep busy.    Most days you will find me lurking around the sites in the middle of the night since I no longer keep working hours.  I teach and help our members with learning how to weld and help them learn to make high quality visually pleasing tig welds.  I  have been home fermenting my own sauerkraut and pepper sauces for several years now and make a really mean peppa sauce that we use on southern greens such as collards and mustards.  My exploits into pickling peppers have been mostly limited to hot processing Jalapeno and Garlic  and ageing them for 3-5 years before we open the container and place them on the table for use as a condiment or cooking ingredient.  Last summer I managed to get three Thai hot pepper plants to really produce a good crop, as well as the one plant I had of jumbo jalapeno peppers.  I air dry my Thai peppers and use them for Thai dishes I prepare for meals.  So that's the readers digest version of what I am all about,  and my service dog Dixie and I look forward to joining the discussions and contributing where we can.

I've looked at the hobby machinist site for quite a while now (and sift through the magazines, I dunno if they're related).  I'm an industrial machinist by trade and working with metal is one of my other passions.  THP will be a great resource for you.
