People are starting to catch on to the effect salt has on a surprising array of foods. Chocolate and caramel are all the rage for a while now, and with good reason. I'm finding that a sprinkle of good salt on most fruits really brings out a richness that's hard to describe. Papaya, all manner of melons, and passion fruit come to mind.
 
I guess it's one of the two original seasonings for a reason. Now if I could just figure out why people are using Piper nigrum instead of powdered CGN 21500...

Yeah, I started figuring out that I like a sprinkle of salt on vanilla ice cream (as well as chocolate, of course).  Figured this out when trying almond and coconut milk as a dairy replacement.  They just tasted too watery, then checked the nutrition info, and they had a third the sodium of regular milk.  So, took a pinch of NaCl and threw it in, and . . . boom!  All of a sudden, a creaminess and sweetness that was not present before.  So, naturally, now if I am having vanilla icecream and something seems missing . . . pinch of salt.

When I read this, I nearly said "I have some nuts for you too, Kevin" but caught myself. I mean, how embarrassing would that have been?
 
You know, because coconuts are a seed, not a nut.
 
Anyway, the next time you feel like making confections, I've got access to all manner of tropical fruits and whatnot that either ship or dehydrate well, and happy to share.

I have never tried a butternut before today,,they are wonderful  :P
 
These would be badass in white chocolate,, mebbe with Smoked salt and Turbinado sugar on top...mind is reeling  ;)

I made 2 new batches tonight,,peanut butter ,chocolate w/Lava flakes    and White chocolate with Alphanerdz Douglah flakes

The Vanilla Butter nut extract made my white choco yellow,,but still came out nice
