Smoker

Hi guys/gals


I have been drying peppers and making powder for a while now.

Recently got my hands on some smoked powder. WOW!!!


Question: is there a way to smoke peppers without dropping big money on a smoker. (I'm poor, but am a handy jimmy rigger)


ANY TRICKS YOU COULD SHARE?

I use a cold smoker I made for about $7.   Used 18 gallon storage tote, tin can hold the wood, solder iron to heat the wood and a cheap wire kitchen rack that fit right in.  Works great.   You can google cold smoker solder iron and see a lot of ideas.
 
Like you, I recently got some smoked powder (thanks to beerbreath81) and was blown away. I used my Weber kettle grill to apple smoke Yellow naga pods this weekend. I put the coals in a perforated tin pan, on one side of the grill. I soaked the chips for about 30 minutes beforehand. I put them on the coals when they were hot, with peppers on the grill on the opposite side. It worked fine. I think I used a little too much charcoal, I choked the vents back to try to cut the heat down some. I was able to do a second batch of the same type pods using the same coal, just added more wood. The vents on top were set opposite the charcoal side too. I smoked the first batch for 45 minutes, and the second for maybe 1 hour and 15 minutes. I finished drying them tonight, and turned out this. Just tried some on a sandwich, really like it.

Great ideas guys. Thanks for the quick response.

I live in an appartment and they frown upon grills. I don't have one.

I have been searching the web and it seems that a cold smoker is what I need/want.

I think with a little fiddling around I may be able to rig one up for way less than $50.

It seems the heat source can be as little as a votive candle to start the smolder, or a soldering iron.

Seems like a fun project.

It's my understanding that soaking chips accomplishes nothing. The wood will not begin smoking until the water evaporates. Just what I read on a bbq forum I used to frequent. Makes sense to me.
 
 I just got a new smoker and I always soak my chips/ chunks  . It seems to allow for a slower burn( and more smoke )  . Depends on size of wood and if you are using charcoal or just wood . There is no wrong way to smoke a pepper or a piece of meat . 
 
 Before I smoked my peppers on the grlil. I would only run one side  of the grill and place a bun ch of wood chips wrapped in foil with holes poked in it on the burning side . The other would have the peppers . Works great but you have to keep an eye on them so not to burn . 
 
I would also only smoke for an hour then finish up in the dehydrator.
