Carolina Reaper Sudden Death Sauce

This is the recipe for my homemade hot sauce called Carolina Reaper Sudden Death. It is a fruit based concoction using fresh strawberries and lime with the current world's hottest pepper, the Carolina Reaper. This sauce is outrageously hot. If someone with a black robe and a scythe knocks at your door, don't open it! 
 
Makes 1 quart
6-8 dried Carolina Reaper pods
2 dried smoked Serrano pepper pods (or Jalapeño)
2 lbs fresh strawberries
1 cup apple cider vinegar
2 tbs brown sugar
3 cloves garlic
2 tsp onion powder
2 tsp coarse sea salt
1/3 cup fresh lime juice
 
Put on some latex gloves and open the windows. Stem the peppers and cut them lengthwise. Remove the seeds. To release more flavor roast the peppers in a skillet on medium high heat and press on them with a spatula. I usually do this for about 20 seconds. To reconstitute the peppers bring a pot of water (about 1/2 cup) to a boil and add the peppers. Boil for a few minutes then reduce the heat, cover and simmer for 5 minutes. Save the water for later. Then add ALL the ingredients in a blender and blend until smooth. Then pour the mixture back into the pot with the peppery water. Bring to a boil then cover and simmer for 20 minutes. I let it cool before I funnel it into 5 oz. sauce bottles. Below is the label I made for it. I will post more of my sauce recipes as soon as I can.

Cool label - are they for 4 x 6" Avery labels? While some reapers may exceed 1.5mil SHU, the sauce will be way below that.
 
You should definitely bottle hot - even if it's only for you. I do 180 degrees at 20 minutes and then bottle while maintaining temp. This ensures bottle sterilization. As soon as you bottle, invert for 5-10 minutes to sterilize the cap.
 
Thank you Extreme. I sterilize my bottles separately. The vinyl waterproof labels are from www.labelsbythesheet.com and measure 4" W x 3.33" H. They come six-up on an 8.5" x 11" sheet. The size is perfect for the 5 oz. bottles I get from www.glassbottleoutlet.com - at .99 cents/sheet it's a pretty good deal.
