Strange family recipes...

We all have them. Family recipes that just seem a little... Weird... But they are awesome and comforting none the less!
 
Tonight I am making hot dogs with mashed potatoes and cheese. I have yet to meet anyone else who makes these. My wife thought I was nuts until she tried them. Definitely a comfort dish from my youth.
 
The recipe is really simple. I mean seriously, no one can screw this up.
 
Ingredients:
 
Hot dogs (I prefer Nathan's or comparable quality hot dogs)
Mashed taters (homemade from real potatoes is best)
Cheese (I used cheap Great Value Fiest Blend because that is what we had)
 
Take your hot dogs and slice them in half lengthwise just enough that you can flatten them out like a hot dog bun. Fry in a pan until they are done (I like a nice brown char on them). Lay out open faced in a baking pan and top with a thick layer of your favorite mashed potatoes. Top with cheese. Bake @ 350-ish until the cheese is melted (I get my cheese a little browned).
 
I made sure to and add a nice dusting of Aji Limon and Caribbean Red powder to mine because what good is food without that little extra kick?
 
If you're feeling frisky, these go great with bacon, sour cream and chives/green onions. Or salsa and sour cream. Kind of like a loaded baked potatoe, but served on top of a lowly hot dog. None of which I currently have besides Tapatio (ahh, the wonders of living 32 miles from the nearest grocery store).

But can you microwave them? One my night time snacks is just taking a tortilla and sprinkling a bunch of superhot powder on it and rolling it up and noming.

Yeah Boy Get some! Next time you are in the mood try it. My daughter doesnt like kraut so hers is kielbasa mashed taters and cheese - I stake it high. I boil the kielbasa for a little bit to get some fat out and to straighten it (easier to cut into lengths) then bake until cheese is bubbly.
 
Mashed taters and any kinda meat is awesome.  Add cheese, fried onion and bacon and it's pure comfort food.
 
Don't eat a lota hot dawgs here, but I can see how yummy they would be!
 
One of my most fave meals growing up was the Sunday roast.  Take the roast beef slices with mashed taters and gravy and pile that into a sammie.  Sooooo guuuuuud!

this is crazy midwest shizz! lol
 
Our family has always saved bacon grease in a jar in the fridge.  Use it to fry things for added flavor, like fried taters or frying cut up chicken for chicken alfredo, saute jalepeno's or onions for a topping.  Midwest thing I guess, but tasty =)  If you have left over mashed potatoes also try making potato cakes and using some light bacon grease to fry in the pan so they don't stick.
 
Also probably helps that most of the cast iron that we fry in has been used since my great grandmother.
