First 2 sauces processed

Thanks again to everyone's contributions for putting the info on here so I could figure out how to do this. After 45 days I couldn't wait any longer and finally processed my first 2 ferments.

The green is mild and tangy. Great for adding to Jambalya we had last night. The orange is hot and sweet. Very Carribean like. I'm really happy how they both turned out and I really learned a lot in the process. I can't wait to get some fresh pods this season and make more!
 
Good lookin sauces Ozzy. How'd you get the sweetness back into the orange one?
