BUMPER'S FLOG

Not wanting to photobomb other's fine food threads, I figured I would start one up of mine.  
 
Sunday roast seems like a good way to start.  Today is pulled pork.  
 
Rubbed pork shoulder, about to go in for a slow cook for 6-7 hours.  Rub is brown sugar, garlic powder, celery salt, onion powder, dried sage, smoked paprika and a few dried cayenne peppers blitzed.

2 1/2 hours into the cook, basting with some homemade cider, and back in she goes!

And the final product.  Been a busy but satisfying afternoon in the kitchen!   Finishing sauce is a homemade bourbon bbq sauce.

Sure, a couple of tenterfield terriers (bred in Australia for rabbiting and keeping mice and rats down) a whippet, and a whippet greyhound cross keep our house full of energy all day long.  A cat stupidly jumped in the yard yesterday, it survived, but it was well de-furred...…. 
 
The 2 tenterfields actually stalk mice like cats, I've seen them sit either side of the fridge for 3 hours straight until the mouse couldn't hack it and made a run for it - gone in less than 2 seconds!  We had a rat last year in the shed and they did a quick job sorting out that too.  In between that, they like picking fights with big dogs for me to sort out for them (oh so brave), and curling up on your lap at the end of the night - pretty awesome dogs.  Jack russell fox terrier chiwawa and italian greyhound bloodlines went into the mix.  Hopefully no fox terrier was put over a chiwawa as a first cross :shocked: (no wonder their eyes bulge!!)

Sorry, in addition to the above, should have also said, no food updates to the flog, leftovers are keeping us going still! 
 
We have a little minpin, whippet, dachshund mutt bitch ...

My family raised and raced greyhounds, though, somI'm very familiar w/ that type of dog ;)

Ours is also a good little rodent killer ...

I'm going to have to google minpin.  Dachshunds are awesome little characters.  I would love to course the youngest pup, he is so damn fast.  Purebred greyhounds are in my future, I love big dogs but didn't have the room until a couple of years ago.

These little guys are full of attitude too from the couple I have met.

My last few food posts have been in the burgers and taco threads, but thinking about getting some jerky marinating today (once the shops open - HAPPY EASTER everyone!!).  I have been pondering this recipe for a while now.  It all started when I had a venison carpaccio rolled in cocoa and blueberry powder.
 
I had a foodgasm on the spot.  
 
Still one of the most memorable dishes I have eaten.  Venison is a bit hard to get here, and when you find it it is incredibly expensive.  Kangaroo is much cheaper, really low in fat and also has a strong flavour. Great for jerky. I have an Excalibur Dehydrator that will do the job. So the plan is to make a wet rub for the jerky as follows and marinate for 36 hours before dehydrating.  
 
Chocberry Habaroo Jerky 
 
Ingredients
 
2.2 pounds (1kg) kangaroo rump or loin (loin is easier to get at my local), chopped into thin slices along the grain
1 1/2 cups dried blueberries, blitzed into a powder (apparently freezing gets a finer powder - will see how just blitzing goes and go from there)
2 tablespoons cocoa powder
1/3 cup of caramelised balsamic vinegar
1/3 cup red wine vinegar
1/3 cup brown sugar
1 1/2 tablespoons rock salt flakes
2 teaspoons fresh cracked black pepper
4 teaspoons habanero powder

3 batches - the planned recipe for kangaroo but 500g (the new brand is stupidly expensive!!) and the same marinade with some round beef to see how it goes with different meats, and a standard mild heat batch of teriyaki style with a little cayenne for her.  The new mix smelt amazing, and tasted incredible, I hope that with 36 hours it transposes into the meat well.  A post dusting of hab powder will keep the heat up once its finished.  Anyhow, the before pics - no surprises as I am sure you are all experts in Jerky.
