Authentic Trinidad and Tobago hot sauce recipes

Trinidad pepper sauce, Trinidad lime pepper sauce, sorrel sauce, tamarind sauce, various chutneys and kuchelas.
 
Also a salsa called mother in law (like Trini pico).

~700 miles or so from Jamaica to T&Tand the available ingredients and spices aren't that different - carrot/onion/lime/peppers/culantro.  It's the bitter melon that makes MiL sauce unique imo, and that's commonly available in Jamaica as well.  
 
Yes I agree but when someone asks for authentic sauce from Trini, a link to Jamaican sauce is not what I would expect. ;)

Trini tends to add more curry due to more Indian influence in some stuff... and Chinese as well. Jamaica has a bit of the Indian but not as much. No chutneys really etc.

What's "MiL" sauce?
 
 You move West from T&T to the ABC's [ Aruba, Bonaire, & Curacao ] and they have stripped hot  sauce down to the basics , just  vinegar , onions and habaneros .. cut up raw and left to sit ..   from a day up  to  a science experiment .....  they call it Pica .
it's not sold anywhere you have to make your own .. great with goat stew [ Kabritu Stoba }
