I picked up a double boiler last week. I saw in one of the threads here that Salsa Lady (thanks SL!) recommended one. I read up on how they work and decided it was a good idea. I ordered one and tried it out yesterday. I really liked the even heat and didn't have any sauce cooked to the bottom of the pan when I was done. My wife commented that I didn't gas her out of the house this time when I made sauce either. I was able to easily bring the sauce to temperature and hold it there until I bottled. This is one tool I wish I had purchased a while ago.
