After hearing a lot about how good they are, I'm finally harvesting my first Jimmys. Now I need to know how best to use them. Thanks for any ideas/recipes.

I like eating them fresh especially after a super hot to naturally calm down the mouth. My son prefers them green. 
They add great flavor to sauces and diced are great in place of bell peppers. I dehydrate and powder a bunch for use on/in eggs and also spaghetti sauce.
After making someone sweat I offer one and they usually say hell no until I convince them it is sweet

me too. also great dehydrated into powder blends, or with pepper & egg sammies. anywhere you'd use green or red pepper Jimmy Ns shine.
