flavor Develop flavor before adding peppers?

Got my 1st small batch of pods just some Cayenne and Serrano's atm enough for a couple of bottles. I'm wanting to make a hot sauce for Pizza, 
 
Anyone mix their flavoring before adding the Peppers in? Last few times I tried it will cooking the peppers it was hard to get the flavor right after all the taste testing my taste buds went south lol.
 
 For a sauce to enhance the flavor of pizza would you just go with ingredients that pizza sauce is made of? Or has anyone come up with a good pizza hot sauce already that they can share?

When it comes to pizza sauce you can make your own with tomatoes from the garden and some basic herbs to your liking. Once its cooked for a while I will add a small can of organic tomato paste to thicken it up. I use fresh peppers as a topping and have various hot sauces available along with some powders for those who like it hotter.
 
I made a pizza one time out of one of my super hot sauces and it literally tore me and my brother up later on that night. So I promised myself I would never use my hot sauce as a pizza sauce ever again.
