zucchini patties mmmmm !

mama made some fresh zucchini patties !  got me some of my garlicky spice / pepper dirt in some . good stuff !

oh potato pancakes , my dads mom made those old slovak recipe , man they were relish !    mama makes them .
o.k. heres the recipe : 
 
 


 
Zucchini Patties
Modified from Allrecipes.com
 
2 cups grated zucchini (lightly salted and pressed between towels to remove excess moisture)
2 eggs, beaten
1/4 cup chopped onion
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
3/4 cup shredded mozzarella cheese
1/2 C bread crumbs
2 tsp minced garlic
1 tsp oregano
Salt to taste
2 tablespoons vegetable oil

1. In a medium bowl, combine all ingredients except vegetable oil. Stir well enough to distribute ingredients evenly.

2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

It actually came out rather well. firm but tender and juicy and a distinct but not over powering note of pineapple. Needs heat but my dilemma is, no one else will touch my cooking then. What a shame.

Another good use for zucchini is when making tacos with ground beef , sautee the beef then when adding what ever veggies add a chopped zucchini as well. The  Zucchini soaks up the taco seasoning, gets to a texture that fits well with tacos and helps stretch the meal. Not to mention the extra servings of veggies you're getting. Tastes good too. 
 
Sounds interesting. maybe will try it next time for taco night.
My tacos, what I make for me are usually very simple though. Ground or shredded meat, lawrys taco seasoning, grilled 6" tortillas and hot peppers. Now, fajitas and burritos are a whole different story!

Look to be trying those zucchini patties this week!

Yea give it a try, should go well. My ground beef tacos are usually pretty simple as well. Maybe just add onion to that list but I like the hot taco seasoning from mccormics I think it was. Goes good as a taco salad too.

you'll love them !  if theres a spice mix with some pepper dirt in it , be sure to sprinkle a little on them well , yours lol their delish !  we always put enough up for winter , bread, brownies ,patties. can't go wrong .

i'll have to give it a try also .  
 
Ill have to try the patties. Looks good!

I'm doing zucchini boats as I type this. Italian snausage, marinara, a couple cheeses, onion, garlic, and smoked powder.

Edit: Oh, and some cherry toms too.
