This looks awesome. Still wondering how they are getting X-hot out of hatch chilis though.
Hatch Chile's come in 5 varieties that I know of. From mild (6-4), medium (big Jim), hot (sardina), extra hot (barkers), and xx hot (lumbre). I just got a case of lumbre a few days ago, they are quite spicy when you use them for a base for verde etc. I usually buy as much as I can find when it's hatch chile season.

Jeff, the Fresh Market in Oakley usually has them over the summer. They always seem to be the milds though. Good enough to freeze for winter use in chillis though!
