Ozzy's All Grain on deck

GMs Keto diet is for real. He sent me a 15lb package of 2 beers and the rest hops lol.

Put some of the hops GM sent me to work this past weekend for a new IPA.

Just dryhopped last night. Fermentation should wrap up this weekend and then Ill keg and dryhop again for another 2 days. These hops smell fantastic. Especially the Vic.

Its that time of year to start brewing for the National Homebrew Competition. Last year was my first time and I had to rush my entries. I still got silver certificates but I think I could have done better.

Tonight Im going to brew a toasted oat porter. Ill split it after fermentation and age one half on cinnamon and coffee. Should be pretty good.

Im hoping to brew a Belgian Tripel tomorrow night. That beer will definitely need the time to mellow out before being judged. Im going to enter one more beer but Im not sure what yet. I was either going to do an IPA or my French Saison that I added Brett to 6 months ago. I have to taste it again. Last time I tried it, it was 3 months old and was tasting good, but the Brett hadnt developed enough yet.
 
Forgot to post about the Tripel I brewed the day after the porter. Its still chugging along in the fermentation fridge.

I added small box of raisins, 2 cinnamon sticks, and 2 vanilla beans to 2ozs of Ameretto. Going to let that sit a couple of days and then add it to half of that porter to age for another week or so.
 
I force carbed what was remaining after bottling. Taste pretty damn good for a plain porter. Hopefully it scores well. Subtle roasted notes with chocolate on the finish.

Tripel taste seems good too. Some of the negatives last year on my score sheet last year were sweetness and phenols. Hard to judge the sweetness right now, but it finished at 1.007 so its well attenuated. I think the phenols are under control this time. Bananas and subtle floral aroma. Really need it carbed up all the way so I can tell. Its coming in at 9.8% too lol.
