I honestly only air dry a few select Thai types for personal consumption or string them for holiday decorations. Where I am it is far too humid to air dry so everything is dried with pretty decent dehydrators. I can usually get 9 racks dry in 24 hours to the point of crispy. I like the concept of the item you posted but think it would be better suited for herbs. Of the things you like thin walled cayennes would be the only one I would chance air drying.
