My first poppers

I just made a small batch of jalapeno poppers for the first time.  I looked at a couple recipes around the internet, but decided to take some guidance from those and do my own thing.  They were all cheese recipes, and I wanted some meat.  Also I have my own taste in cheese pairings

I started with 24 large jalapenos.  Tops cut and cored.

I then cooked 13 strips of bacon crispy.  I chopped it pretty fine.
I cooked 1/2 lb of spicy uncased sausage and broke it up finely.

I then mixed by hand:
13 strips Bacon
1/2 lb Spicy Sausage
8 oz Provolone
8 oz Mozzarella
8 oz warm Cream Cheese

I stuffed the jalapenos.  I had enough stuffing to do at least 12 more if I had them.  That would have filled my rack.

I baked them at 350 degrees for 25 minutes.

I'll let you know how they come out!

All in all, they turned out pretty good.  I would add more meat next time though and some seasonings.

Look awesome! I like to cook mine longer for a roasted flavor and they get softer. Preference. Usually do them on the grill that way but the recipe is awesome.

They look great! I like your choice of cheeses. Brown crust. Also spices what to do? S&P? You have spicy sausage. Did 25 minutes cook the peppers to done? Thanks for sharing.
