     I can vouch for that ^. I made them for the first time this summer and they are delicious. Think of a potato pancake, but made with shredded zucchini instead. Better texture and flavor. But pretty weird looking!

     I bet you're right. We had ours with homemade black raspberry apple sauce. They were stupid, stupid good. I'm going to hit the farmer's market this week and hopefully pick up some zucchini to make more.

lol, jup, except I got dried, blitz them to powder pieces and mix into the zucchini, the moisture will be sucked up by the dried apple

Quick and simple last night.
Potatoes, Onion, Whole Habanero, Cumin, couple tbsp flour to thicken, Blitzed. Topped with Hummus and folded over, nice big taco
