This morning breakfast.
The usual 75/25 Buckwheat Tapioca flour, Cinnamon, Ginger powder, Buttermilk powder and graded Nutmeg for the mix. Baking powder no soda(dont use it for cooking). Hydrated 15min
Topped with soaked Prunes, Cashews and Blueberries.

This Sundays Pancakes
The usual 75/25 Buckwheat/Potato Starch, 1 egg/cup.
Blueberry Vanilla honey Syrup I made. 3/4L Blueberries, I stick Vanilla Whole Bean, 1/4Lhoney, 1tsp salt. Blitz all and bottle.

Was in Calgary last Thursday and finally got some #3 maple syrup, the real stuff, nice and rich flavor. Been out more then a year so I grabbed a gallon lol.
My usual Sunday Buckwheat Pancakes with a good cup of Coffee.

Made some Brown Rice Pancakes for Lunch. Three mix dried chillies couple eggs, liquid from mushroom soaking and fried in coconut oil.

Red Hab Pancake

Buckwheat, Tapioca, Cinnamon, Ginger and med Red Habanero. (Hab on pancake just for reference).
Blitz, wait 10min for hydration and Baking powder to work, then fried in Coconut Oil.

Nice bite and flavour of Habanero, with a large cup of Cojta Rica Rainforest Coffee

Buckwheat when done right is just as fluffy as regular flour, just healthier :drooling:
