Turkey Day is near!

I want to hear what everyone's plan for their bird is this year.
You smoking it? What wood?

Spices....you gonna jerk your turkey? Or traditional herb blend?

Brining....yes or no?

No wrong answers....I just want to drool at all the different techniques. Then on Turkey Day post some pics so we can all try next year.
 
Jerk breast and legs served with mashed sweet plantains (mashed maduros with rum sauce), rice and peas, callaloo, cranberry sauce with allspice (to complement jerk), and lots of beer.
 
Pumpkin and apple pies. Vanilla ice cream.

Have mercy!!! That sounds amazing. Very nice. Only problem I see is no pecan pie. May want to get on that
 
I forgot that. I always get one. I buy a bunch of pies from this French bakery that nails it! Have to have warm apple a la mode. Have to have pumpkin. I can eat pecan anytime but yeah usually get one too. ;)
 
The only thing I require on Thanksgiving is stuffing. I can rock a sweet potato casserole or proper mashed taters (ricer/spaetzle-maker style) too, but it's all about the stuffing for me.
 
In fact, the reason for the turkey at all, is to have the jus for the stuffing ...
 
I think I am going to smoke a turkey breast with pecan, fry or bake a whole turkey after a few day brine. Getting a bushel of oysters and will do stuffing from scratch, might do a small bath of oyster stuff or just shuck and eat them raw. As for other side there will be some mashed taters with scratch made drippings gravy and usually fresh green bean casserole. 
 
The dessert part is under consideration.

We do green beans, too. Once we tried them with butter, bacon pieces, and pistachios ... we've never had them another way.
 
I don't ever need green beans another way, now, actually.
