Eggplant Griddle

Mmmm
Sliced in quarters, put seasoning and Chipotle in the middle after coating eggplant with olive oil and salt. Peppers on the side so they brown.
Top with cheese and Thai Basil. Tomatoes with added Chipotle powder.
Nice and spicy :)

Scratch my back with some roasted garlic.
 
Sundried toms.
 
Throw down some thin slices of fresh buffalo motz,
 
Lay it on some puff pastry.
 
Bake it like Betty Crocker.
 
Eat it like you're on death row.
 
And you've got about 15 minutes left.
 
 
 
I have one plant in a double-bucket setup that we overwintered.  Thing still has two baseball-sized EPs on it.  We did alot of EP Parmesan this fall.  Figure they'll make a nice lunch with some potatoes, then trim a bit and see how spring treats the plant.  Took forever for it to retain flowers and make fruit last season, but was grown from a HD small sproutling.
 
As far as I know, skins were nice, not rock hard.
 
 
 
Frying up another one for a dip right now, not breaking down as normal so I wonder if they have been artificially ripened like some others, so it possible their not ripe inside totally.
