My Chocolate Bhut Jolokia sauce..

My hottest sauce to date "Chocolate Bhut Jolokia sauce" I'm hoping it calms down in a couple of weeks good flavor but HOT HOT HOT!
PH came out at 3.6
 
30 Choc Bhut
Half onion 
5 cloves garlic 
5 baby carrots
1 tsp paprika
2 tsp salt
2 tsp chili powder
1 tsp brown sugar
2 tsp Chipotle powder
1 cup lime juice
2 cups water
1 tomato

Consistency is a bit thicker than I expected like Ketchup as for the color I got no clue was surprised myself, I thought it would have came out brown. 
 
Looks great. Is it a fermented sauce? Did you get the PH down so low with just the lime juice? Did you mix everything together and then bottle, or did you cook it first?
 
Looking good... Must taste good too.

I found that lime juice also makes the colors a bit lighter.
I put apple vinegar and a little cocoa powder to my choco. hab. sauce and it came out more brownish.
