spirits The Barrel-Aging Thread

I have some 5 gallon wine barrels, (2 Pinot, 1 Cab) that i use for aging.
 
In the Cab barrel I am aging a Chocolate Vanilla Bourbon porter
 
In the pino barrels I have a 10 gallon batch of Belgian Dark Strong ale (OG was 1.132) and the gravity is sitting ~1.024 right now (so ~14.2% ABV)
 
That batch has been down for 8 months right now.  Cant wait for that one to finish.
 
Not sure how I would feel about the wine barrel taste. I tried 1 beer with it, and I wasn't too crazy about it.

Depends on the beer style for me.  Like an IPA aged in a wine barrel taste like hot buttered after-gym workout ass.  But high ABV belgians complement different types of red wine flavors very well.  A lot of neat stuff you can do.

Then again I live in a wine valley....so I love wine too heh

Oh ya, dont forget sour beers.  Sour beers aged a bit in wine barrels are awesome.  I was just down in Austin and they had a Sour Cherry Stout aged in I think a Cabernet barrel.  Holy crap that was tasty.
