HELP! 5# of green Thai chiles- What to do???

Hey, Mates!  I'm hosting a Making Hot Sauce class at the Grange hall tomorrow.  I'd ordered 5 pounds of Thai chiles expecting them to be red chiles that could be used for sambal.  What was delivered is 5 pounds of GREEN Thai chiles. 
 
I figure I can do a basic green sauce, but I thought I'd do a ShoutOut to see if anyone has any great ideas of what to do with 5 pounds of green thai chiles.  The class will have about 12 people so we want somethign that can be divided up to at least 12 portions.  I can get some additional chiles or other ingredients at the store in the morning.
 
Any great inspirations?  Or just grind it up with onion/garlic/lime/vinegar?

Thanks, Ryme~   that looks like a very simple traditional condiment.  I'll take all the suggestions to the class and let them decide what to do. 
 
Other suggestions?  I'll post pics of the class and sauces etc after the class tomorrow.  Last year, I forgot to take pictures.  This year?  More Pics!!!
 
Im just a hack at making sauce but I've dabbled with asian. I used rice wine vinegar, ginger, lemon grass, a touch of lime, and a shot of hoisen. Blend it all with garlic, shallots and a fist full of Thai peppers.

It worked for me and was gone quickly.
 
That's kind of what I was thinking for ingredients.... 
 
 
 
green thai chiles
lots of garlic
lemon grass (because we have some for another sauce)
lime
???other green chiles like jalapeno, anaheim, pasillo???
tamari
fish sauce
shallots
 
(hoisin!  gonna get some of that in the morning on the way to the class...)
 
Thanks for the suggestions.  I didn't have time to plan anything, so I just threw it to the class.  5# chiles, make a sauce!
 
It ended up as a Kitchen Sink Sauce. and is pretty dang good!  I'll post all the ingredients when I get the final list into the house.  from what I remember it was-
5# Thai green chiles
2# jalapeno
apple
onion
garlic
tamari
cilantro
apple juice
balsamic vinegar
coriander?
peas
mango?
salt
?????
