I'm a little late on the kimchi but I promised myself I would do it.
 
Yesterday morning I found a half empty bottle of raw kombucha from ages ago. Then I thought "hey...why can't I just make my own scoby so that I can brew my own kombucha?" :idea:

I brewed up some sweet tea, let it cool to room temp, then added the left over kombucha. After funneling the mixture into the jar I wrapped a towel around the mouth and secured it with a rubber band. The tea is showing signs of life by forming lots of little bubbles already. Hopefully in a couple weeks I'll have my own scoby.
 
I've heard of some similar fermentation methods.

Btw...the big jar that had the oyster in it is officially no bueno. The amount of gasses created are constantly making it burp juice everywhere in the fridge and the flavor is that of bad shellfish. I might try salt curing the oyster IF decide I do that again.
