So this is happening.....

Thanks guys. They're excellent.

Sauce:

Rice vinegar
Soy sauce
Fish sauce
Coconut liquid aminos
Lime juice
2 Nectarines
A little bit of water
Grated ginger
Hoisin

Combine to taste and simmer until thick. Mash nectarines and simmer a tad more.

Brine:

Water
Salt
Sichuan peppercorns
Bay leaves

Cover birds in a container and set aside at least three hours. Drain the brine off of the birds and give them a quick rinse. Let birds air dry for at least a few hours until a nice pellicle has formed. I put mine in front of our air conditioner.

Cook:

Set que to around 225-250. With some cherry chunks. Smoke for a couple hours until internal temp is around 165. Baste the birds every half hour or so.
 
Why not keep the cheap beer in its own can? #portland
 
Cheap beer comes in standard 12oz cans. These are game hens and are a bit smaller than chickens.

I got some free Red Bull at a promotion a while back so I dumped it and filled it with some coors light that someone gifted to me for returning the 600 dollars they lost and this is a run on sentence.

Apparently you have no kitchen. You're weird. :lol:
