What is your favorite Stuffed hot peppers recipe?

Do jalapeno poppers count? I don't even care because jalapeno poppers are awesome. You can also make them out of habaneros too if you can find some fat enough. 
 
Even though everyone already knows how to make them I'm gonna post a recipe anyway.
 
Ingredients:
16 oz cream cheese
Handful of shredded sharp cheddar cheese (optional)
1 pack dry ranch dressing mix, not dip mix (This is the secret ingredient to the best poppers ever)
Pinch of garlic powder
Juice of 1 lemon (or half a lemon if you have big ass lemons)
Smoked paprika
Bunch of jalapenos
Bacon (# of peppers = # of bacon strips required since you cut both in half)
Toothpicks
6 pack of beer
 
Instructions: 
Preheat oven to 400F (204C)
Drink beer.
Set cream cheese out on counter to soften a bit.
Split jalapenos lengthwise and deseed em.
Cut bacon in half so you have shorter strips
Mix cream cheese, shredded cheese, ranch mix, garlic & lemon juice. Try not to eat this all straight out of the bowl.
Stuff peppers with cheese mixture.
Dust top with smoked paprika.
Wrap in bacon & stick a toothpick through it sideways to hold bacon in place & give you a handle to eat them when they are still way too hot to eat.
Put on a foil lined pan and bake for ~20-30 min or so until the bacon is crispy & peppers have softened.
Weep softly when you realize you just ate a lb of cream cheese & a whole pack of bacon by yourself.
Continue drinking.
 
Alternate instructions:
Do all that stuff listed above but throw them on the smoker for like 3-4 hours until they're done. Or smoke them for a bit and then finish in the oven if you're impatient. Or grill them. Or eat them raw if you're weird.
 
If you do decide to grill them though do not leave them unattended in case the bacon grease causes a flare up and your poppers catch on fire. I have totally never done that though because I am a professional.

This looks wonderful.  I'm going to do this (with the ranch dressing powder, what a great idea), and use Habaneros.  This looks wonderful.
 
A fun twist for poppers like TXCG posted is to coat the bacon in your favorite BBQ sauce. I especially like to do this for habanero poppers. Also I like to add green onion to the cheese mix.

Gonna have to try the ranch mix, never considered this before. One whole package for just 1 block of cream cheese?

I usually use 1 pack for 2 8oz blocks (16oz total) but I've used a whole pack with just 1 8oz block before when I was making a smaller batch and it was fine.
 
Can always mix it in a bit at a time & adjust to personal taste.

I find it funny my first real post has to do with food. lol Anyway my favorite peppers so far to stuff are Jalapeno, Fresno and Habanero Peppers. I stuff them and then wrap them in bacon. To stuff them I actually follow a spinach dip recipe that I also love stuffing mushrooms with. These definitely aren't going to do anything to help the Cholesterol levels but they are fantastic. The link below has the spinach dip recipe. I mix it and stuff the whole peppers without cooking the dip and wrap with as much bacon to cover the entire pepper. Bake in the oven till the bacon is cooked. Last time I made them I added a few ground ghost peppers to the dip and stuffed jalapenos. So awesome.

I didn't take pictures, but I did throw together some stuffed habaneros today.  I put some avacado oil in a pan (enough to almost coat the entire bottom.  Heated up on low 2 green jalapenos from my yard chopped fine.  Added spicy italian sausage insides and broke it all up while cooking.  I put half a bar of Philadelphia Cream Cheese (I think 8oz so 4oz) in a bowl.  put colby/cheddar cheese blend.  Put in some taco seasoning.  Put in salt, pepper, the sausage, italian bread crumbs, a tbs of avacado oil.  I mixed that all up with a fork in the bowl.  I then put tinfoi on a baking sheet.  cut and deveined my habaneros (there was a lot of leftover filling) and filled each half with the mixture.  put cheese on top.  Placed pan in preheated oven at 350F.  Baked for 22 min.
 
You can't beat Jalapenos stuffed with brie and wrapped in bacon, but a nice change is to stuff some Padron Peppers with a cream cheese, blister them and then sprinkle them with flaked salt. The cheese and bitterness of the Padrons go really nice and then there's the occasional hot one.
