Roast Potatoes

Thought I did a thread for this but could not find it.
 
Roast Potatoes are one of my fav foods. Add a mix of spices in a bag and shook up pre cooked(crisper) and cut potato, then added Olive oil (or coconut depending how warm the day is solid on a cold day) in the bag and shook again, then in a pan at 450.
Hummus as dip :)

[SIZE=medium]Here’s another great way to cook potatoes. It shares some of the important characteristics of dragonsfire’s method like first boiling the potatoes to give a nice crisp finished product. The whole potato smashed flat makes it different from other ways to serve taters. I served them last weekend with sautéed Orange Roughy and grilled asparagus.[/SIZE]
 
[SIZE=14pt]POTATOES DA DELFINA[/SIZE]
 
[SIZE=12pt]1 1/2 lb small Yukon Gold potatoes[/SIZE][SIZE=12pt] (about 1 1/2 inch potatoes)[/SIZE]
[SIZE=12pt]peanut oil[/SIZE]
[SIZE=12pt]sea salt[/SIZE]
[SIZE=12pt]black pepper[/SIZE]
[SIZE=12pt]1/4 cup Italian parsley, chopped[/SIZE]
[SIZE=12pt]2 tsp grated lemon zest[/SIZE]
[SIZE=12pt]1/4 cup extra virgin olive oil[/SIZE]
[SIZE=12pt]1/4 cup chopped garlic[/SIZE]
 
[SIZE=12pt]Boil potatoes in well-salted water[/SIZE]
 
[SIZE=12pt]When potatoes are cool enough, smash by pressing gently with heel of hand into palm of other hand. Smash to 1/2 in. thickness. Skin will split. (Can prepare potatoes ahead of time)[/SIZE]
 
[SIZE=12pt]Combine parsley and lemon zest[/SIZE]
 
[SIZE=12pt]Heat olive oil in small skillet, sauté garlic until lightly browned[/SIZE]
 
[SIZE=12pt]Transfer garlic to parsley/lemon mixture with slotted spoon (Can prepare this ahead of time)[/SIZE]
 
[SIZE=12pt]Pour 1/2 in. of peanut oil into large skillet, heat moderately high[/SIZE]
 
[SIZE=12pt]Put potatoes in hot oil, cook on both sides until crisp and well browned (8–10 min)[/SIZE]
 
[SIZE=12pt]Drain potatoes on paper towels, season with salt and pepper[/SIZE]
 
[SIZE=12pt]Combine potatoes and parsley mixture, and toss gently[/SIZE]
 
Last nights supper
Marinated with two flavours, one with Turmeric and spice, the other tomato/pepper rosemary , chipotle spice and habanero.
Yellow potatoes precooked in PC.
