The Count's Drunken Adventures In The Kitchen

I know we already have the drunken chef thread, but I'm going to start this anyway.  Almost anytime I snap a picture in the kitchen whisky is involved.  Don't let the beers with the plated pics fool you, I just crack one open to drink while eating since hot straight bourbon doesn't taste good with food to me.  The rest of the night is all WHISKY!!!  t didn't even know I had taken most of the pics I'm going to upload initially.  They date back to October 2015 or so and I just found them while uploading pics from the camera of a recent off-roading trip.

So lets start with Drunken Chicken Lo Mein…...

Next up is BBQ chicken, oven roasted potatoes and Ranch Style canned beans.

Tostados?  I seriously do not remember making or eating these!

I believe I spot an IR temp gun on the counter, too =)

Yes you do.  I like to use it to take the guess work out of how hot the wok/skillet/dutch oven is.  All my cookware is cast iron with the exception of one sauce pot and one skillet, which are both All Clad.  I even try and include the wok/skillet/dutch oven temps in the recipes I write down.  It makes getting consistent cooking results easier for me.  If I say preheat a wok over medium high heat, then add peanut oil, swirl and add meat…. I have to guestimate what is "preheated", and the meat may steam instead of stir frying.  If I say preheat wok to 500deg, then add peanut oil swirl and add meat…..  I know when it's preheated and that the meat will stir fry instead of steaming.  It also allows me more flexibility in when to start heating up cookware.  If I know I'm going to need a skillet at around 400deg but don't need it for awhile because i'm working on another part of the meal, I can turn the heat on low or medium low and let it slowly heat up.  Works well especially when drinking and you idea of a hot skillet may be something like "yeah f*** it that's hot enough, thow the meat in there!"

A couple of meals that I was so busy cooking (DRINKING!) that I didn't think to take a pic until I was sat down ready to eat.

Chicken Fried Steak with broccoli and cheese rice and canned Ranch Style Beans.  Also must have made some nice fried jalapeño slices and ranch dip.

Chicken and bacon fried rice. YUM!

Pork carnitas and charro beans (not from a can, lol).

Love chicken fried steak! ...

Looks like brains - which, I feel, is a sign of a nicely done chicken-fried job ...

My Grandmother cooked for us until I was around 11 and my mother remarried and my Stepdad took over cooking duties (amazing cook).  She had probably cooked pan fried steak once a week, but never did anything more than salt, pepper, and a little flour.  When I would go to restaurants I would order Chicken Fried Steak, given the chance, and at that point didn't realize how close they were to being exactly the same.  To this day my wife, daughter and I eat lots of CFS and CFC.

It's one of my favorite things on earth ...

CFS, hash browns (chunks, not shreds) + soft scrambled eggs with melted cheese, all under sausage gravy ...

God awful diet-wise, but a heavenly treat any time, day or night ... but especially late-night, decidedly drunk ...
