Galaxy Simcoe Imp IPA

I love these 2 hops so I'm going to blend them together so I have something to drink that's smooth for the next month with the weather warming up.

I didn't plan on using any Caramel malt but I ran short on what I thought I had of Amber.  Not a big deal.  I think it will still turn out.

Mashed at 149F.   Fermenting @ 68F

Fermented 1 week.
Going to dryhop for 1 week, cold crash, then keg.

5 ozs for the first wort/boil. 6 more ozs for the dry hop :).

All tucked away. I have to figure out what's going on in Beersmith. My numbers are jacked up and the volume was short. Won't effect the taste or anything. But I have to figure out why my gravities have been coming up short. I'll have to check the gap on my grinder. Maybe it got bigger or something.

On to the secondary to dry hop with 2oz Simcoe and 4ozs of Galaxy. :)

Now at 1.010 so its 7.61%.  There was still quite a bit of yeast in suspension so I wouldn't be surprised to see it go down another point or 2.  I did go ahead and purge the bucket with CO2 before racking into it.

Lol I may have unintentionally made a NEIPA. I pored a sample earlier to check if it's carbed up yet and it was hop trub city lol. I may need to get one of those things you have GM that floats and pulls the beer from the top.
