White Eggplant

Randomly picked up 4 white eggplant. Never grown or eaten them before. To the right of them are three scotch bonnets and a basil pot. Anyone familiar with white eggplant?

I've grown Casper and Gretel eggplant - 2 types of white eggplant but smaller varieties, Overall they seem to have a milder flavor with less bitterness than the purple varieties I've grown ( Ichiban, Black Beauty). With 4 plants you should have more than you can use as they are usually very prolific - Just be sure to harvest them before they get too big, since as they get larger they get more bitter and tougher so don't let them get too big or they do not taste as good - and they seem to put out more fruit if you do not let larger ones stay on the plant. 
 
This year I got a late start but have one small casper eggplant going ( probably will not start to flower for a couple more months) and wound up buying 3 of the Ichiban Japanese eggplants from Lowes ( Bonnies plants) and those are really starting to take off now with the first eggplants starting to grow and about a dozen or so flowers on each plant currently so a few more weeks and we should start getting some ready to eat.
 
For many years in my early life I hated eggplants because the were bitter, learned they were not cooked properly. Eggplants need to be soaked in salt water and their no longer bitter, Love them ever since.
Got four plants now, two black beauties and two Asian longs :)
 
My Casper eggplants are finally starting to grow a bit (got a late start from seed this year so they haven't caught up to the Ichiban eggplant starts I got at lowes but they are starting to look decent now !

Yeah they're actually enjoying the 100+ degree weather (much more than my pepper plants !) - THe Ichibans are really starting to pod up now with more flowers popping all the time - almost time to pull the first ones this season and between the 3 plants should have more than enough for the rest of the summer !

Only bitter eggplants need to be soaked. Many varieties are ready to go when they are picked. And even bitter eggplant are often tasty at picking, if you just pick them a bit earlier...

Just harvested the first set of Ichiban's and a few Cukes this morning : (think I might have too many plants with the 3 Ichiban's as this is a small harvest compared to what I should get as the plants grow the rest of the summer ) and the Cukes are also just getting started but never seem to have too many of them !
