Pumpkin Habanero Sauce

Hello everybody chili lovers,  
Today I want share with you Recipe from my friend. He is chili grower too and there is his recipe.  
This sauce is suited to all kinds of meat except maybe fish. 
Ingredients:  
a lot of Habaneros :-) 
4 x Medium sweet red peppers 
3 x large carrots 
2 x medium onions 
1 x ginger root 
garlic as desired 
fresh herbs according to your preferences ( rosemary, thyme, etc ...) 
olive oil 
rice vinegar or wine vinegar 
dark brown sugar 
salt

Cooking process :  
1) choose from the pumpkin seeds, pulp and peel cut into slices and place in a baking dish greased with olive oil. Among the pumpkin costs a few twigs of herbs. All the above have a good rub with olive oil and bake in a preheated oven at 180-200 ° C for 45-60 minutes until the pumpkin is soft. 
 
2) Meanwhile, cut into cubes of onion, sweet pepper and carrots. Lightly fry the onion in oil, add the carrots and sweet peppers and restujeme moment. 
 
3) Then mix the garlic sliced, chopped Habaneros and squeezed the juice of grated ginger. Simmer long enough to soften the vegetables. 
 
4) Add the baked pumpkin, if necessary slightly little water and simmer for a few minutes. Herbs from the baking pans longer use and throw away. 
 
5) All chop-bar blender until smooth. At this time you may have to add a certain amount of water, from which will depend on the density of the final sauce. Let the sauce a few minutes at a gentle boil bubbles. 
 
6) Phase seasoning! If needed and add sugar, pumpkin but is itself sweet enough so that the sugar carefully. Add the rice vinegar, season with salt if appropriate. Now we do not cook, just a few minutes to warm up. 
 
7) The last possibility to influence the consistency of sauces by adding water. Primarily the sauce is thick enough, so there is no need to use thickeners simply diluted with water ...
