Smoked Mac-n-Cheese

• 4 Cups Shredded Tillamook Sharp Cheddar
• 1 Cup Shredded Parmesan
• 2 Cups Shredded Gouda
• 1 package Philadelphia Cream Cheese
• 1 package large elbow Macaroni
• ¼ Cup Butter
• ¼ Cup AP Flour
• 3 Cups Milk
• 3 Fresh Jalapeños (2 minced, 1 thin sliced)
• Red Savina Powder
• S&P
 
Make a rue with the butter, flour and milk, add cheeses (reserve 1 C. each Cheddar and Gouda), Red Savina Powder and minced Peño. Stir in the cooked pasta and mix well.  Put in an aluminum pan and top with reserved cheeses and sliced Peño.
 
I used a 50/50 blend Apple and Cherry wood. Smoke for 1 hour at 225º.
 
Crack would be easier to quit.

We made it for my neighbor's Bday party yesterday. There was KILLER smoked Brisket, Pulled Pork, Bratwurst, Burgers, 3 BBQ bean dishes, Grilled Chicken, countless amount of salads, potato, green etc. Someone even brought a pizza. Only thing I didn't see there was an Omelette station. LOL So much food and it was all awesome but guess what was raved about the most? Yep the Mac-n-Cheese. It wasn't a competition but, I won that shit anyway. :rofl: 
 
Yes!  I've got to try that out, what wood are you using to smoke? Ever try pizza + pepper of choice + beef jerky on that smoker?  No lies, smoked jerky pizza is amazing and hopefully come early winter I will have ingredient to play around with for some recipe.
