Tonight's supper, chip dip.

 

One large Eggplant

Two Bell Peppers

Habanero to taste

Seasoning

Handfull Lemon Basil

Half tub Olives

ACV 1/4 cup

Coconut oil 1/4 cup

Eggplant dipp I made on the weekend.

Fried up and blitzed with olive oil, ACV, dried tomatoes, Thai chillies, Oregano, Mayan sweet onion, salt.

Does the use of coconut oil really come through? Mask other flavors? That's interesting, cool recipe.
