drying basics of dehydrator drying? washing etc.

Hi all,

We have a large amount of habeneros and red carribeans (our first time growing hot peppers).

We found some misinformation on the internet, and strung up our peppers, then found that our environment is too humid to dry them properly by stringing. We were able to rescue most of them, and I stored the freshest in a large cardboard box in the fridge between layers of paper towels, think the less humidity the less mold.

The semi dried ones that didn't mold, I cut in half and layered between paper towels also, and we have a dehydrator being delivered tomorrow from Amazon.

I have to admit that I didn't wash the ones I halved -- didn't use pesticides and we're good about hand washing, so hopefully that's not a problem. They all appeared clean or were wiped clean, anyway.

Is the non washing going to be a problem? I can go ahead and wash the whole (fresh) ones before drying. Not sure if that would work on the halved ones.

And, can anyone point me towards some good directions for drying these babies in the dehydrator? I saw one video of a guy using vinegar on his peps before drying. Also saw hydrogen peroxide mentioned.

Thanks, for any help!

Wash the peppers, slice them in half, flesh side down and cut side facing the sky. Dry them around 125 or less for best color and flavor results.
Yup, what he said.....
