Annual Thanks To THP

It's that time of year when I come out of lurch to say thanks to all THPer's for all their posts, I come here regularly to read an learn. I get lots of help and lots of ideas, so thank you all. Not many pictures this year as I don't think of the camera as a cooking utensil.
 
First day of cooking did 10 racks on the dehydrator and about 10 batches of sauce, mostly our old faithful,

Second day of cooking I madr some purees, another batch of yellow sauce and trying fermenting. I have lot of peppers this year but no jars to make sauces. I have tried fermenting in the past and have had no luck, (looks like same thing again this year. No bubbling and it is day 4). Not in pictures but 10 more racks in the dehydrator.

So today will be a great day here in southern Ontario, I will be out in the garden harvesting. Don't know what to do with all these peppers so maybe I'll just freeze them for now, SWMBO has already complained about all the peppers in the freezer from last year, so iwill have to deal with those while sneaking in more.

Do you have any good recipes to share?

And if you have any questions about the ferments, feel free to ask. I'm not an expert, but I've got a few batches under my belt.
 
thorolygood That is a killer job my friend everything looks amazing. You have def done your homework and are a shinning example of  what can be accomplished by following the guidelines you learned from members here at THP .  :)

All the recipes I get I get from here or a variance on them. That's why I give a big thanks. I'll check my recipes and see if there any I didn't get from here.
Maybe I will PM you later on the fermentation's on what I did, cause I do need help

I did bad this year but it will be better next year
We had a drought in Southern Ontario this year so it was a chore watering. We live in the country so have to get the water trucked in. With the drought and all, had stellar plants, up to 5' tall and quite a good crop. Wish I had more time and more jars because I like making sauces.

Wouldn't do what I do without the members here at THP. Knowledge here is second to none.
 
Just because there isn't any bubbling doesn't mean the ferment isn't working. I've had some not bubble at all and I've had some that bubbled for just one day. I've also had some explosively bubble and that was a real problem. It ended up ruining it cause something got in it that wasn't supposed to while I was changing the airlock. This year I tried out just tossing in the culture starter without first making yogurt from it and it worked out fantastic. It smells like the yogurt too. That's the trick. If it smells different than the peppers by themselves, it likely fermented. A pH test will let you know for sure, but only if you have a baseline to work with. But as long as it doesn't smell rotten or taste weird you got something to work with.

Congrats...alot to be proud of!!! Just learning myself, would love to have a stash like that.
