What to do with green pods?

Unlike my habs which i think make a decent green hot sauce, im not sure what to do with the lemon drops that fail to ripen before the frost arrives. Ive pretty much gotten all my other peppers lined up for something but not the lemon drops.
 
Serrrano for relish i use on nachos
Cowhorn adds a nice zip to about anything that needs a little kick.
Anaheims are useful ripe or green
I just picked all my Super Chiles and made another liter of hot vinegar.
 
Im just a bit stumped for the green lemon drops. The flavor is ok but nothing to rave about compared to ripe. So im mostly stuck at green lemon drop vinegar. They were ok finely chopped on some nachos but i kinda liked others better. I may try them in my jalapeno relish with store bought jalapenos. They usually are really mild and need a kick from something hotter....How i loath those bland store bought jalapenos!!!!.
 
You could make a salsa with them  or filler for picking. How the heat compared to ripe?
 
I usually throw them in the trash unless they were beginning to ripe

I am considering pickling some. Not much difference in heat from green to yellow. Ripe they are much sweeter and the citrus flavor comes through. They are good added fresh to salsa before serving. Adds a nice crunch and a little kick to a mild salsa.
I just picked these for a habanero verde sauce. The larger ones are my mystery Anaheim i will roast in the oven first. I tossed in a few ripe because the green ones have far less "hab" aroma.

Better pic of my mystery pepper. The plant is just loaded with pods in all stages of ripening. The one on the right is about as big as they seem to get.

Last fall I took all my green jalopenos and put them into a refrigerater that I was converting to a smoker/dehydrater with just a 100 watt light bulb and a week or two later they all turned red. I'm going to try that with some of my other peppers this year.
 
I tried it with totally green lemon drops. Not artificial light just on the window sill. I took very long for any yellowing and it got very soft so i scrapped that idea. It works good with orange habs though. They get a little soft but turn orange easily.
 
Ive heard pulling the plant and hanging it works with some peppers. Even just a large branch with peppers on it. We got a couple nights in the mid 40F range but sofar all plants are hanging on. Its not supposed to get that cold again for about a week and days are still in the 70s.
 
I'd probably chop'm up and eat them with eggs,or  toss'm in a tomato salsa, whatever.  But, I'm a "waste not.." kinda guy.  None of my "solutions" seem ideal, do they?
