Green hab sauce

Well mostly green.
P1020303_zpss1ow8y54.jpg

Above habs and Anaheims
1/2 cup cane vinegar
1/2 cup cider vinegar
1 cup water
1 tsp salt
1 tsp sugar
1 tsp garlic powder
2 tsp onion powder
1 tbs copped cilantro (mostly stems)

Used just enough of the "brine" to cover peppers. Cooked down till reduced almost 50%. Cilantro added just as i was turning off the heat and covered to retain some of the flavor.

Additional vinegar, water, salt, sugar and lime juice to taste. Its cooling now.

I used lime juice at bottling time, Added to taste. I really prefer to avoid cooking the lime juice. This batch made a total of 17oz btw.
