drying Preserving peppers - Dehydrating and freezing methods

I made this video the other day after harvesting a bunch of my peppers. Freezing and dehydrating are two methods that I use most often when preserving peppers. it's a quick and easy way to put them up for future use. I've found that vacuum sealing them is key for long term preservation.

Yeah, I need a separate freezer. lol. My wife gives me hell for taking up all the freezer space.
 
mine did to , lol thats what led to the freezer in the garage !

I can't even talk my wife into a floor freezer which we could use for food. If I needed one for peppers she would have a fit lol.

Are the seeds still viable after dehydration ??
 
Great vid and tutorial....I packaged and froze 2 batches yesterday before seeing this.
 
Is there any disadvantage to leaving the stem on? I didn't remove mine.

I don't know if it affects either way. I always remove mine, clean, dry and inspect pods first. That way I know they are ready to use out of the bag.

Depends on the temperature.  Lots of people use low settings to dry for seeds.  They do not tend to survive freezing if still wet when frozen,
